The Bordeaux wines have always been produced with several grapes with complementary characteristics. For red wines, the
Cabernets
and the
Merlots are the main varieties (90% of the crops).
The Cabernets give their tannins to the wines but several years are necessary to get the best quality. The
Cabernet Sauvignon is a late vine which offer a good resistance to rot, but sometimes raises difficulties upon maturation.
The Merlots give a more supple wine with faster evolution. They are more precocious and easy to ripen but sensitive to drip, frost
and rot.
Over a long period the mixing of the 2 grapes in proportions which vary according to soils and type of wines gives good results.
