Bordeaux
The vineyard of Bordeaux is spreading over 3 rivers : the Garonne, the Dordogne and their common estuary, the Gironde.
The Bordeaux wines have always been produced with several grapes with complementary characteristics. For red wines, the Cabernets and the Merlots are the main varieties (90% of the crops).

The Cabernets give their tannins to the wines but several years are necessary to get the best quality. The Cabernet Sauvignon is a late vine which offer a good resistance to rot, but sometimes raises difficulties upon maturation. The Merlots give a more supple wine with faster evolution. They are more precocious and easy to ripen but sensitive to drip, frost and rot.

Over a long period the mixing of the 2 grapes in proportions which vary according to soils and type of wines gives good results.

For white wines, the main grape is Sémillon (52%) completed in certain area by the Colombard (11%) and mainly the Sauvignon and the Muscadelle (15%) which possesses very specific and fine flavours.
